Apples: The Perfect Pie & Rustic Tart
When done well, apple pie is both the quintessential American dessert and a delicious way to bake with fresh fall apples. The slightly cinnamon, buttery pastry smell from the oven is an incomparable way to perfume your home. Learn to make an easy food processor pie dough, how to roll the dough for baking, and tips that will give you the flakiest pastry atop perfectly spiced apples. The rustic tart is even easier and just as delicious. Everyone will leave with their own apple tart.

Slow Food $5 Food Challenge
Can Slow Food Cost Less Than Fast Food?
Slow Food USA is asking all Americans to organize their own events in which they serve a meal to friends and family that is both slow food and inexpensive, coming in at just $5 per person. I've taken the challenge, and am offering a $5 meal to all my Cooking Freak friends.
For $5 you will get:
- Three-Bean Vegetarian Chili
- Sour Cream Cornbread
- Mulled Cider/Homemade Gingersnaps
You must RSVP for this meal no later than Friday, Sept. 30.

Tricks-of-the-Trade
This class will be taught by Chef Nicole Roarke, culinary school instructor and owner of NR Catering. Classic Hearty Chicken and pureed Butternut Squash are 2 of the soups Chef Nicole will make as she guides you to mastering the art of soupmaking. She will also explain how to make stock, the basis of all great soups, as well as some helpful knife skills to help you chop those vegetables. Pick up some chef tips that will set you apart from the average home cook. If you love soup and have always wanted to learn from a pro, this is the class for you. Just in time for cool weather eating!

Cake Decorating 101
Would you like to decorate a birthday cake....or cupcakes...that will impress family and friends? Want to know how to use a pastry bag to pipe out "Congratulations" or learn to frost & border a layer cake that looks professional? Make simple flowers and get ideas for creative designs on baked goods? Join Ellen LaPiana, former cake decorating instructor at Michael's Craft Stores and custom designer of special occasion cakes, for this beginners class in cake decorating for the home baker. Everyone will go home with a small cake decorated in class.

Local Bayport Chef and owner of Miss Michelle's Gluten-Free Bakery, Michelle Gillette will lead this class in the secrets of delicious confections that just happen to be gluten free!
